]]> Each year, we ferment natural plum wine as a base for our distilled slivovitz.
Every now and then, we “steal” a small batch and, instead of distilling it, we let it age in oak barrels—fortified with last year’s plum spirit.

If you like, you could call it a plum wine… raised on its mother’s distillate.

This limited batch of 800 bottles was aged for three years in oak, gaining remarkable depth and concentration. The result lies somewhere on the imagined border between Italian amaretto liqueur and Japanese umeshu.

Plummy and marzipan-like, this amber-hued drink can shine both as a dessert wine and as an elegant apéritif—on ice or neat.

ABV: 15%

A natural honey wine crafted from a blend of citrus blossom, wildflower, and jujube honeys. A classic mead with a distinctly Galilean character, featuring clean aromas of honeysuckle, orange blossom, vanilla, and warm spices.

Tasting Notes: Honeysuckle, vanilla, and orange blossom; a round, full body with delicate sweetness, mineral complexity, and a long, balanced finish.

2. Plum Wine

Volume: 500 ml
ABV: 22.5%

A natural plum wine aged for three years in oak barrels and fortified with plum spirit from the previous vintage. Only 800 bottles were produced from this limited release.

The result is an extraordinary drink that sits somewhere between Japanese umeshu and Italian amaretto liqueur—rich, deep, and intensely concentrated.

Tasting Notes: Ripe plums, marzipan, and chocolate, with hints of port wine and butter. Full-bodied with exceptional depth and an extraordinarily long finish.
